The Top Turkish Pastries and How to Make Them

1. Baklava

Baklava is perhaps the most famous Turkish pastry, known for its layers of phyllo dough filled with chopped nuts and sweetened with syrup or honey.

Ingredients:

  • 1 package of phyllo dough
  • 2 cups of finely chopped walnuts or pistachios
  • 1 cup of melted butter
  • 1 cup of water
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with some melted butter.
  3. Layer sheets of phyllo dough, brushing each layer with melted butter.
  4. After layering about 8 sheets, spread a layer of the chopped nuts.
  5. Continue layering phyllo and nuts until all ingredients are used, finishing with several layers of phyllo on top.
  6. Cut the baklava into diamond or square shapes before baking.
  7. Bake for 45 minutes or until golden brown.
  8. While baklava bakes, combine water, sugar, and vanilla in a saucepan; bring to a boil and simmer for about 10 minutes.
  9. Once the baklava is baked, pour the hot syrup over it and let it cool before serving.

2. Börek

Börek is a savory pastry made from thin layers of dough, often filled with cheese, spinach, or minced meat.

Ingredients:

  • 1 package of yufka or phyllo dough
  • 1 cup of cottage cheese
  • 1 cup of spinach (cooked and drained)
  • 1 egg (for glazing)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the cottage cheese, spinach, salt, and pepper.
  3. Take one sheet of dough, lay it flat, and add a spoonful of the filling along one edge.
  4. Roll the dough tightly around the filling to create a log shape.
  5. Place the rolled börek on a greased baking tray and brush the top with beaten egg.
  6. Bake for 25-30 minutes or until golden brown.

3. Simit

Simit is a circular bread covered with sesame seeds, often described as a Turkish bagel. It is crispy on the outside and soft on the inside.

Ingredients:

  • 4 cups of all-purpose flour
  • 1 packet of yeast
  • 1 cup of warm water
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • Sesame seeds for coating

Instructions:

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit until it becomes frothy.
  2. Add flour and salt to the yeast mixture and knead for about 10 minutes until smooth.
  3. Cover the dough and let it rise for about an hour, until it doubles in size.
  4. Preheat your oven to 375°F (190°C).
  5. Divide the dough into small balls and roll them into ropes, then shape them into circles.
  6. Dip each circle into water and then into a plate of sesame seeds to coat.
  7. Bake for 20-25 minutes until golden and crispy.
