How to Make Turkish Rice Pudding (Sutlac)

Turkish rice pudding, known as Sütlaç, is a classic dessert that has won the hearts of many with its creamy texture and delicate flavor. This traditional sweet dish is especially popular in Turkish households and is often served chilled. If you're looking to recreate this delightful treat in your own kitchen, follow this easy recipe to learn how to make Turkish rice pudding.

Ingredients:

  • 1 cup of short-grain rice
  • 1 cup of water
  • 4 cups of milk
  • 1 cup of sugar
  • 1 tablespoon of vanilla extract
  • 2 tablespoons of cornstarch
  • 1/4 cup of water (for cornstarch)
  • Ground cinnamon (for garnish)

Instructions:

Step 1: Cook the Rice

Rinse the short-grain rice under cool water until the water runs clear. In a medium pot, combine the rice and 1 cup of water. Bring it to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.

Step 2: Prepare the Pudding Base

Once the rice is cooked, add 4 cups of milk and 1 cup of sugar to the pot. Stir well to combine. Cook the mixture over medium heat, stirring occasionally, until it begins to thicken. This process usually takes about 10-15 minutes. Be sure to watch it closely to prevent it from sticking to the bottom of the pot.

Step 3: Thicken the Pudding

In a small bowl, dissolve 2 tablespoons of cornstarch in 1/4 cup of cold water until smooth. Gradually add this mixture to the simmering rice and milk mixture, stirring constantly to avoid lumps. Continue to cook for an additional 5-10 minutes until the pudding thickens to your desired consistency.

Step 4: Add Vanilla and Cool

Remove the pot from the heat and stir in 1 tablespoon of vanilla extract. Mix well to distribute the vanilla evenly throughout the pudding. Allow the Sütlaç to cool at room temperature for about 30 minutes, then pour it into serving bowls or dishes.

Step 5: Chill and Serve

Cover the bowls with plastic wrap and refrigerate for at least 2 hours, or until fully chilled. Before serving, sprinkle a little ground cinnamon on top for added flavor and presentation. Sütlaç can be enjoyed on its own or with a drizzle of honey for extra sweetness.

  • For an authentic taste, try using Turkish rice (such as Baldo rice) as it lends a creamier texture.
  • If you prefer a richer flavor, substitute whole milk with a mix of whole milk and cream.
