  • 3 cups water

Instructions

Step 1: Cook the Lentils
Rinse the red lentils under cold water until the water runs clear. In a pot, combine the lentils and water. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water and let the lentils cool.

Step 2: Prepare the Vegetables
