How to Make a Turkish Harissa Sauce

Instructions

Start by soaking the dried red chili peppers in warm water for about 30 minutes. This will soften them and make them easier to blend. Once they are soft, remove the stems and seeds for a milder flavor, or keep the seeds if you prefer more heat.

2. Toast the Spices

In a small skillet over medium heat, toast the cumin seeds and coriander seeds until they become fragrant (about 3-4 minutes). Keep stirring to avoid burning them. Once toasted, remove them from heat and let them cool.

3. Blend the Ingredients

In a blender or food processor, combine the soaked chili peppers, garlic cloves, toasted cumin and coriander seeds, salt, olive oil, and lemon juice. Blend the mixture until it reaches a smooth consistency. If the sauce is too thick, add a little water, one tablespoon at a time, until you achieve your desired thickness.

4. Adjust the Flavor

Taste the sauce and make any necessary adjustments. You can add more salt or lemon juice for extra flavor. If you like it spicier, consider blending in a few more chili seeds or fresh chili peppers.

5. Store the Sauce

Transfer the harissa sauce to a clean jar with a tight-fitting lid. It can be stored in the refrigerator for up to two weeks. The flavor will deepen and improve over time, so it's a great idea to make it in advance!
