  • 4 whole fish (such as sea bass or sea bream), cleaned and scaled
  • 1 cup of cooked rice
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1/2 cup of fresh parsley, chopped
  • 1/4 cup of pine nuts, toasted
  • 1/2 cup of currants or raisins
  • 1 teaspoon of ground cumin
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Lemon slices, for serving

Instructions

Step 1: Prepare the Filling

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

Add the diced bell pepper to the skillet and cook for an additional 3-4 minutes until softened. Stir in the cooked rice, pine nuts, currants, cumin, parsley, salt, and pepper. Mix thoroughly and allow the filling to cool slightly.

Step 2: Stuff the Fish

Preheat your oven to 180°C (350°F). Take the cleaned fish and gently make a slit along the side, creating a pocket for the filling. Be careful not to cut all the way through the fish.

Using a spoon, fill each fish with the prepared rice mixture. Make sure to pack it slightly but not too tightly, as the filling may expand while cooking.

Step 3: Bake the Fish

Place the stuffed fish on a baking sheet lined with parchment paper. Drizzle olive oil over the top of the fish and season with salt and pepper to taste.

Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

Step 4: Serve and Enjoy

Once cooked, remove the stuffed fish from the oven and let them rest for a few minutes. Serve the fish warm, garnished with lemon slices for an added burst of flavor.
