Instructions

Step 1: Prepare the Chickpeas

If using dried chickpeas, soak them overnight in water. The next day, drain and rinse them before cooking. If you're using canned chickpeas, simply drain and rinse them before adding to your soup.

Step 2: Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.
