Ingredients

  • 4 large bell peppers (red, green, or yellow)
  • 1 cup rice (preferably medium or short grain)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium carrot, grated
  • 2 tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 2 cups vegetable broth

Instructions

Step 1: Prepare the Peppers

Begin by cutting the tops off the bell peppers and removing the seeds and membranes. Rinse them under cold water and set aside to dry.

Step 2: Cook the Rice

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rice and toast it for about 2-3 minutes until it's lightly golden. Add 2 cups of vegetable broth, bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked. Once done, remove from heat and let it cool.

Step 3: Prepare the Filling

In a large skillet, heat the remaining olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent. Then, add the diced zucchini and grated carrot. Cook for another 5 minutes until the vegetables are tender.

Mix in the diced tomatoes, tomato paste, cooked rice, oregano, paprika, salt, and pepper. Stir well until everything is combined, and cook for an additional 2-3 minutes. Remove from heat and allow the mixture to cool slightly.

Step 4: Stuff the Peppers

Preheat your oven to 350°F (175°C). Gently fill each bell pepper with the vegetable and rice mixture, pressing it down lightly to ensure they are well packed. Place the stuffed peppers upright in a baking dish.

Step 5: Bake the Peppers

Add a splash of vegetable broth to the bottom of the baking dish to keep the peppers moist. Cover the dish with aluminum foil and bake for 30 minutes. After this, remove the foil and bake for an additional 15-20 minutes until the peppers are tender and the tops are slightly golden.

Step 6: Serve

Once baked, remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving. These Turkish stuffed peppers are perfect as a main dish or as an accompaniment to a larger meal.
