2. Sigara Böreği

These delicious cheese-filled pastries are shaped like cigars and are a popular Turkish snack. Sigara böreği can be filled with various ingredients, but the classic recipe uses feta cheese and parsley.

Ingredients:

  • 4 sheets of yufka or phyllo dough
  • 200g feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 egg, beaten (for sealing)
  • Oil for frying

Instructions:

  1. Mix the crumbled feta cheese and chopped parsley in a bowl.
  2. Cut yufka or phyllo sheets into triangles.
  3. Place a spoonful of the cheese mixture at the base of each triangle, then roll tightly into a cigar shape.
  4. Seal the edge with beaten egg.
  5. Fry in hot oil until golden brown. Drain on paper towels before serving.

3. Babaganoush

This smoky eggplant dip is perfect for spreading on pita bread or serving with fresh vegetables. It's a healthy and flavorful alternative to hummus.

Ingredients:

  • 1 large eggplant
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice

  • Salt, to taste
  • Pomegranate seeds (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and roast for about 30-40 minutes until the skin is charred and the flesh is soft.
  2. Allow eggplant to cool, then scoop out the flesh and place it in a bowl.
  3. Add tahini, olive oil, lemon juice, garlic, and salt. Blend until smooth.
  4. Garnish with pomegranate seeds before serving.

4. Pide

Pide, often referred to as Turkish pizza, can be topped with a variety of ingredients. A popular choice is minced meat combined with herbs and spices.

Ingredients:

  • 500g ground beef or lamb
  • 1 onion, finely chopped
  • 1 green pepper, chopped
  • 1 tomato, diced
  • 2 tablespoons tomato paste
  • Salt and pepper, to taste
  • 1 batch of pizza dough

Instructions:

  1. Preheat your oven to 475°F (245°C).
  2. In a pan, sauté the onion and green pepper until soft. Add the ground meat, cooking through, then mix in the diced tomato and tomato paste. Season with salt and pepper.
  3. Roll out the pizza dough into an oval shape. Place the meat mixture on top, leaving edges clear for crust.
  4. Bake for 15-20 minutes until the dough is golden.
