How to Make Kunefe, a Turkish Cheese Dessert

Künefe is a delectable Turkish dessert that combines crunchy pastry with melted cheese, offering a unique culinary experience. This beloved dish is traditionally served warm and is often drizzled with sweet syrup. Ingredients

  • 200 grams of kadayıf (shredded phyllo dough)
  • 100 grams of unsalted butter, melted
  • 200 grams of mozzarella cheese or a soft Turkish cheese like hellim
  • 400 ml of sugar
  • 200 ml of water
  • 1 tablespoon of lemon juice
  • Pistachios, finely chopped (for garnish)

Instructions

1. Prepare the Syrup

In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves. Once boiling, add lemon juice and let it simmer for about 10 minutes until it thickens slightly. Remove from heat and allow it to cool.

2. Prepare the Kadayıf

Preheat your oven to 180°C (350°F). In a large bowl, fluff the kadayıf with your hands to separate the strands. Pour the melted butter over the kadayıf, mixing well to ensure all strands are coated. This gives the dessert its flaky texture.

3. Layer the Kadayıf

Grease a round baking dish or a large skillet with a little butter. Take half of the prepared kadayıf and evenly spread it in the bottom of the dish, pressing down gently to form a compact layer.

4. Add the Cheese

Next, evenly distribute the mozzarella or Turkish cheese over the kadayıf layer. Make sure to leave some space around the edges to prevent the cheese from leaking out while baking.

5. Top with More Kadayıf

Cover the cheese with the remaining kadayıf, making sure to press it down gently. This will help keep the cheese from spilling out while baking.

6. Bake the Künefe

Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and crispy. Keep an eye on it to ensure it doesn't burn.

7. Add the Syrup

Once the Künefe is baked, remove it from the oven and immediately pour the cool syrup over the hot dessert. Allow it to soak in for a few minutes. You want it to absorb the syrup for optimal sweetness.

8. Serve and Garnish

Carefully cut the Künefe into wedges. Serve warm, garnished with finely chopped pistachios on top for an extra crunch and flavor. Enjoy this delightful Turkish cheese dessert with a cup of Turkish tea or coffee!
