  • 1 cup dried chickpeas (soaked overnight)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium potato, diced
  • 2 tablespoons olive oil
  • 6 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions:

Step 1: Prepare the Chickpeas
Start by rinsing the soaked chickpeas under cold water. In a large pot, add the chickpeas and cover them with fresh water. Bring to a boil and then reduce the heat, allowing them to simmer until they are tender, usually about 1 to 1.5 hours. Drain and set aside.

Step 2: Sauté the Vegetables
In another large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent. Stir in the diced carrot and potato, cooking for an additional 5 minutes.

Step 3: Combine Ingredients
Add the cooked chickpeas to the pot followed by the vegetable or chicken broth. Sprinkle in the cumin, and season with salt and pepper. Bring the mixture to a gentle simmer.

Step 4: Cook the Soup
Allow the soup to cook for about 20-30 minutes until all the vegetables are tender. If you prefer a creamier texture, consider using an immersion blender to puree a portion of the soup, then stir it back in.

Step 5: Add Freshness
Just before serving, stir in the lemon juice for a touch of brightness. Taste and adjust seasoning as necessary.

Step 6: Serve
Ladle the soup into bowls and garnish with freshly chopped parsley. Serve with a slice of crusty bread for a complete meal.
