How to Make Turkish Chickpea and Eggplant Stew

Turkish Chickpea and Eggplant Stew, known as "Patlıcanlı Nohut Yemeği," is a hearty and nutritious dish packed with flavors. This vegetarian stew not only complements the Mediterranean diet but also makes for a perfect meal full of protein and fiber. Here’s how to prepare this delicious dish at home.

Ingredients

  • 1 cup dried chickpeas (or 2 cans of chickpeas, drained)
  • 1 large eggplant, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • 2 cups vegetable broth or water
  • Fresh parsley for garnish (optional)

Instructions

Step 1: Prepare the Chickpeas

If you're using dried chickpeas, soak them overnight in water. The next day, drain and rinse the chickpeas, then boil them in fresh water until tender, typically about 45 minutes. If using canned chickpeas, simply drain and rinse them before use.

Step 2: Cook the Eggplant

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and sauté until golden brown and slightly softened, about 5-7 minutes. Remove the eggplant from the pot and set it aside.

Step 3: Sauté the Aromatics

In the same pot, add a bit more olive oil if necessary, and toss in the chopped onion. Cook until the onion becomes translucent, then add minced garlic. Sauté for another minute, making sure not to burn the garlic.

Step 4: Add Tomatoes and Spices

Add the diced tomatoes and tomato paste to the pot. Stir in the cumin, paprika, salt, and pepper, allowing the mixture to simmer for about 5-10 minutes until it breaks down and becomes fragrant.

Step 5: Combine Ingredients

Once the tomato mixture is ready, bring back the sautéed eggplant and cooked chickpeas into the pot. Stir to combine all the ingredients evenly.

Step 6: Simmer

Pour in the vegetable broth (or water) to cover the stew. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 30 minutes. This allows the flavors to meld together beautifully.

Step 7: Serve

Once the stew is cooked, taste and adjust the seasoning if needed. Serve the Turkish Chickpea and Eggplant Stew hot, garnished with fresh parsley if desired. It pairs wonderfully with crusty bread or rice.
