Instructions

1. Prepare the Vegetables

Begin by preheating your oven to 425°F (220°C). While the oven is warming, prepare the vegetables. Wash, peel (if needed), and chop the zucchini, eggplant, bell peppers, onion, and tomatoes. Mince the garlic and set the ingredients aside.

2. Mix with Olive Oil and Spices

3. Spread on a Baking Sheet
