Turkish stuffed mushrooms, known as "biber dolması" when involving peppers, are a delicious and versatile dish that can serve as an appetizer or a main course. This recipe combines earthy mushrooms with a rich blend of spices, fresh herbs, and savory fillings that elevate this dish to a new level. Here’s how to make Turkish stuffed mushrooms at home.

Ingredients

  • 12 large button mushrooms
  • 1 cup cooked rice (or bulgur for a traditional touch)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 100g ground meat (lamb or beef is recommended)
  • 1 medium tomato, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 1/4 cup grated cheese (optional)

Instructions

Step 1: Prepare the Mushrooms

Start by cleaning the mushrooms with a damp cloth to remove any dirt. Carefully remove the stems and set them aside. You can use a small spoon to hollow out the caps slightly, creating space for the filling.

Step 2: Make the Filling

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the ground meat and cook until browned. Next, incorporate the diced tomato, reserved mushroom stems (finely chopped), cooked rice, paprika, cumin, black pepper, and salt. Mix well and let it cook for about 5-7 minutes, allowing the flavors to blend.

Finally, fold in the chopped parsley and lemon juice. If you’re using cheese, mix it into the filling at this stage.

Step 3: Stuff the Mushrooms

Preheat your oven to 180°C (350°F). Carefully spoon the filling into each mushroom cap, pressing it in gently to ensure it’s packed. Place the stuffed mushrooms on a baking tray lined with parchment paper.

Step 4: Bake

Bake the stuffed mushrooms in the preheated oven for about 25-30 minutes or until they are tender and lightly browned on top. If you have used cheese, it should be melted and bubbly.

Step 5: Serve

Remove the mushrooms from the oven and let them cool slightly. Serve warm or at room temperature, garnished with extra parsley or a drizzle of olive oil. These Turkish stuffed mushrooms are perfect as a starter or as part of a mezze platter.
