  • 1 medium head of green cabbage, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 2 tomatoes, diced (or 1 can of diced tomatoes)
  • 2-3 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups vegetable broth or water
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until golden, about 5 minutes.
  2. Add the diced tomatoes and cook for another 2-3 minutes until they soften.
  3. Stir in the chopped cabbage, paprika, cumin, salt, and pepper. Mix well to combine.
  4. Add the chickpeas and vegetable broth to the pot. Bring to a gentle boil.
