Instructions

Step 1: Prepare the Eggplants

Start by salting the diced eggplants to draw out excess moisture and bitterness. Place the diced eggplant in a colander, sprinkle with salt, and let it sit for about 30 minutes. Rinse with water and pat dry with a paper towel.

Step 2: Sauté the Vegetables

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.

Step 3: Add the Eggplant and Peppers
