How to Make Turkish Vegetable Fritters (Kizartma)

Turkish vegetable fritters, known as Kızartma, are a delightful and crispy treat that brings a taste of Turkish cuisine to your kitchen. Ingredients

  • 2 medium zucchinis, grated
  • 1 large carrot, grated

  • 2 cloves of garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup flour
  • 2 large eggs
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Vegetables

Begin by grating the zucchinis and carrots. Squeeze out excess moisture using a clean kitchen towel to prevent soggy fritters. In a large mixing bowl, combine the grated zucchinis and carrots with the chopped bell pepper, onion, garlic, and parsley.

Step 2: Mix the Batter

Add the flour, eggs, salt, and pepper to the vegetable mixture. Stir well until all ingredients are thoroughly combined. The mixture should be thick enough to hold its shape when dropped into the oil.

Step 3: Heat the Oil

In a large frying pan, heat about 1/2 inch of oil over medium heat. You can test if the oil is hot enough by dropping a small amount of the mixture into it; if it sizzles, the oil is ready.

Step 4: Fry the Fritters

Using a tablespoon, scoop portions of the mixture and carefully drop them into the hot oil. Avoid overcrowding the pan to ensure even cooking. Fry for approximately 3-4 minutes on each side or until they are golden brown and crispy.

Step 5: Drain and Serve

Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil. Serve warm with a side of yogurt or a fresh salad for a delicious appetizer or snack.

Tips for Perfect Kızartma

  • Feel free to experiment with different vegetables such as eggplant, spinach, or potatoes.
  • For added flavor, sprinkle some feta cheese into the mixture.
