You can roast the peppers for a smokier flavor by placing them under a broiler or on a grill for about 10-15 minutes, until the skin is charred. Alternatively, you can also roast them directly on the stove by placing them on a flame-proof pan.

Step 2: Blend the Peppers

Once the peppers are roasted, let them cool slightly. Peel off the charred skin if you desire a smoother texture. Transfer the peppers to a blender or food processor. Add the minced garlic, olive oil, and tomato paste if using. Blend until smooth.
