  • 1 whole fish (sea bass or mackerel)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley, dill)

Instructions:

  1. Clean and gut the fish, then make shallow cuts on each side.
  2. Rub the fish inside and out with olive oil, sprinkle with salt, pepper, and herbs.
  3. Preheat the grill and cook the fish for about 6-8 minutes on each side, or until cooked through.

2. Shrimp Casserole (Karides Güveç)

This hearty dish combines shrimp with vegetables and a rich tomato sauce, typically served in a clay pot. It's a perfect blend of flavors, making it a favorite during family gatherings.

Ingredients:

  • 500g shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 400g canned tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a pan, sauté the onion and garlic until translucent.
  2. Add the bell pepper, tomatoes, paprika, salt, and pepper, allowing the mixture to simmer for 10 minutes.

  4. Pour the mixture into a clay pot and bake at 180°C (350°F) for 15-20 minutes.
  5. Garnish with fresh parsley before serving.

3. Stuffed Mussels (Midye Dolma)

A popular street food in Turkey, stuffed mussels are a delightful snack often enjoyed by many. They are filled with a mixture of rice, spices, and herbs, making them flavorful and satisfying.

Ingredients:

  • 12 large mussels, cleaned and opened
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tablespoons pine nuts
  • 1 teaspoon cinnamon
  • Salt and black pepper to taste
  • 1 lemon, for serving

Instructions:

  1. In a pot, sauté onion until golden, then add rice and pine nuts.
  2. Add 2 cups of water, salt, and cinnamon; cover and cook until rice is tender.
  3. Stuff each mussel with the rice mixture, closing them carefully.
  4. Reheat in a steamer for about 5 minutes to warm through.
  5. Serve with lemon wedges on the side.
