How to Prepare Turkish Seafood Pide

Ingredients Needed

To make the perfect Turkish seafood pide, you will need the following ingredients:

  • For the dough:
    • 4 cups all-purpose flour
    • 1 packet (2 ¼ tsp) active dry yeast
    • 1 cup warm water
    • 1 tsp sugar
    • 1 tsp salt
    • 2 tbsp olive oil
  • For the filling:
    • 200g shrimp, peeled and deveined
    • 200g fish fillet (such as cod or salmon), cut into small pieces
    • 100g calamari, sliced
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 bell pepper, finely chopped
    • 2 tbsp fresh parsley, chopped
    • 1 lemon, zested and juiced
    • Salt and pepper to taste
    • 1 egg yolk (optional, for egg wash)

Instructions

Step 1: Prepare the Dough

Begin by combining the warm water, sugar, and yeast in a bowl. Let it sit for about 10 minutes until it becomes frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the yeast mixture and olive oil. Gradually mix the flour into the liquid, forming a dough. Knead the dough on a floured surface for about 5 to 10 minutes until smooth and elastic.

Step 2: Let the Dough Rise

Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 3: Prepare the Seafood Filling

While the dough is rising, heat a tablespoon of olive oil in a skillet over medium heat. Sauté the chopped onion and garlic until they're soft. Add the bell pepper, and continue cooking for another 2 minutes. Then add the shrimp, fish, and calamari. Season with salt, pepper, lemon zest, and lemon juice. Cook for around 5-7 minutes until the seafood is just cooked through. Finally, stir in the fresh parsley. Remove from heat and let it cool slightly.

Step 4: Assemble the Pide

Once the dough has risen, punch it down and divide it into equal portions (about 4-6). Roll out each portion into a rectangular shape, about ¼ inch thick. Place a generous amount of the seafood filling along the center, leaving enough space on the edges to fold them over. Pinch the sides to create a boat-like shape.

Step 5: Bake the Pide

Preheat your oven to 400°F (200°C). If desired, brush the edges of the pide with egg yolk for a golden finish. Place the assembled pides on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the dough is golden brown.

Step 6: Serve and Enjoy

Once baked, remove the pides from the oven and let them cool slightly. Serve warm, garnished with extra parsley and lemon wedges on the side. Turkish seafood pide is perfect as an appetizer or a main dish and pairs beautifully with a fresh salad.
