Instructions

Step 1: Prepare the Beans

Start by soaking the dried beans in water overnight. This helps to soften them and reduces cooking time. If you forget to soak them, you can do a quick soak by boiling them for 5 minutes, then removing from heat and letting them sit covered for an hour.

Step 2: Cook the Beef

In a large pot, heat the olive oil over medium heat. Add the cubed beef and cook until browned on all sides, about 5 to 7 minutes. Remove the beef from the pot and set aside.

Step 3: Sauté the Veggies

In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 to 5 minutes. Next, add the diced carrots and potatoes, stirring occasionally for another 5 minutes.

Step 4: Combine Ingredients

Return the browned beef to the pot. Stir in the tomato paste, paprika, and black pepper. Mix everything well for about 2 minutes to help release the flavors.

Step 5: Add Liquid and Beans

Drain and rinse the soaked beans, then add them to the pot. Pour in the beef broth or water, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours, or until the beans and beef are tender.

Step 6: Season and Serve

Once the soup is cooked, taste and season with salt as needed. If you prefer a thicker soup, you can mash some of the beans against the side of the pot. Serve hot, garnished with fresh parsley if desired.
