2. Making the Filling

Add the reserved zucchini flesh, diced tomato, rice, parsley, paprika, salt, and pepper. Stir everything together and cook for 2-3 minutes. Then, add 1 cup of water or vegetable broth to the mixture, cover, and simmer for about 10 minutes or until the rice is partially cooked.

3. Stuffing the Zucchini

Once the rice mixture is cooked, remove it from the heat and let it cool slightly. Carefully fill each hollowed-out zucchini with the rice filling, pressing down to ensure they are well-packed. Leave a little space at the top, as the rice will expand as it cooks.

4. Cooking the Stuffed Zucchini

In a large pot, pour the tomato sauce and gently place the stuffed zucchinis upright. Add enough water or vegetable broth to cover the bottom of the pot (about 1 cup). Bring the liquid to a boil, then lower the heat, cover, and simmer for about 30-40 minutes, or until the zucchinis are tender and the rice is fully cooked.
