How to Make Turkish Stewed Artichokes (Enginar Yemegi)

Turkish stewed artichokes, known as Enginar Yemeği, are a flavorful and healthy dish that's perfect for any occasion. This traditional recipe brings together tender artichokes, aromatic herbs, and a delightful blend of vegetables, creating a comforting meal that's enjoyed throughout Turkey. If you want to learn how to make this delicious dish, follow the simple steps below.

Ingredients

  • 4 medium-sized artichokes
  • 1 large onion, finely chopped
  • 2 medium carrots, diced
  • 1 large potato, diced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth (or water)
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Fresh dill, chopped (for garnish)

Preparation Steps

Step 1: Prepare the Artichokes

Start by cleaning the artichokes. Remove any tough outer leaves and trim the ends of the stems. Cut the artichokes in half and gently scoop out the choke (the inedible fuzzy part) using a spoon. To prevent browning, immerse the cleaned artichokes in a bowl of water mixed with lemon juice until you are ready to use them.

Step 2: Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the diced carrots and potatoes, and cook for an additional 5 to 7 minutes until they begin to soften.

Step 3: Add the Artichokes

Drain the artichokes and add them to the pot. Stir gently to combine the ingredients without breaking the artichokes. Season with salt and black pepper to taste.

Step 4: Simmer the Dish

Pour in the vegetable broth (or water) and add the lemon juice. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 30 minutes, or until the artichokes are tender. Stir occasionally to ensure even cooking.

Step 5: Serve

Once the artichokes are tender and the flavors have melded together, remove the pot from heat. Transfer the stewed artichokes to a serving dish and garnish with fresh dill. Enginar Yemeği can be served warm or at room temperature, making it a versatile dish for any meal.
